Peppercorn Pork Roast

- 2 tbsp green peppercorns, drained
- 3 tbsp sweet-hot mustard
- 1 tsp prepared horseradish
- 0.5 tsp grated lemon peel
- 0.3 tsp salt
- 3 lb lean pork roast
- 1 cup apple cider
- 1 whole apple, cut into thin wedges
- 3 tbsp cornstarch
Instructions

Combine peppercorns, mustard, horseradish, lemon peel, and salt in a bowl. Spread over top and sides of pork roast.

Place a metal rack in the bottom of the slow cooker; pour in apple cider.

Place coated pork roast on rack. Cover and cook on LOW for 9 to 10 hours.

Turn to HIGH. Remove pork and rack; keep warm.

Mix cornstarch with ¼ cup cold water; stir into drippings. Cook on HIGH 20 to 30 minutes until thickened.

Add apple wedges to sauce. Slice roast and serve with cider-apple gravy.
