Penne Rigate con Salsiccia

  • 6 tbsp unsalted butter
  • 1 count small onion, peeled and chopped
  • 1 clove garlic, finely chopped
  • 1 lb Italian pork sausage
  • 1 sprig fresh rosemary
  • 0.7 cup dry white wine
  • 1 pinch freshly grated nutmeg
  • 1 pinch ground cloves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 13 oz penne pasta
  • 0.8 cup Parmesan cheese, freshly grated

Instructions

    Bring a large pot of salted water to boil for the pasta.

    Heat butter in a large skillet over medium heat. Sauté onion and garlic until softened.

    Remove sausage from casings and break into small chunks with a fork. Add to skillet and cook until well browned.

    Add rosemary sprig and wine; cook slowly for 10 minutes until wine is mostly absorbed.

    Stir in nutmeg, cloves, salt, and pepper. Remove rosemary.

    Cook penne according to package directions until al dente; drain.

    Toss pasta with sausage mixture and Parmesan cheese. Serve immediately with extra cheese.
