Pecan Waffles With Roasted Pecan And Banana Syrup
Ingredients
- 1 0.5 cup all-purpose flour
- 1/3 cup ground pecans
- 1/3 cup granulated sugar
- 1 tbsp baking powder
- 0.3 tsp salt
- 2 egg yolks
- 1 tsp pure vanilla extract
- 1 0.8 cup whole milk
- 0.5 cup unsalted butter, melted and cooled
- 2 egg whites
- 1 cup pecan pieces
- 2 ripe bananas, peeled and sliced ½ inch thick
- 2 0.5 cup pure maple syrup

In a large bowl, combine the flour, ground pecans, sugar, baking powder, and salt. In another bowl, lightly beat the egg yolks and vanilla, then beat in the milk and melted butter. Fold the wet ingredients into the dry until just combined (batter should be slightly lumpy).

Beat the egg whites to stiff peaks in a clean bowl. Gently fold into the waffle batter, leaving some white fluffs visible.

Pour about 1 cup of batter onto a preheated, lightly greased waffle iron. Close the lid and cook per the manufacturer's directions until golden and crisp. Repeat with remaining batter.

Make the syrup: in a sauté pan, melt the remaining 2 tablespoons butter. Add the pecan pieces and cook, stirring, for 2 to 3 minutes until golden. Add the banana slices and maple syrup; bring to a simmer.

Serve the waffles hot with the warm pecan-banana syrup spooned over the top.
