  • 3 peaches, pitted and diced
  • 1 tbsp lime juice
  • 0.3 cup sweet red pepper, diced
  • 1 green onion, chopped fine
  • 4 tsp fresh coriander, chopped fine
  • 1 tbsp Jalapeno pepper, minced
  • 2 tsp brown sugar
  • 1 tsp vinegar

    salt and fresh ground pepper to taste Peel, pit and dice peaches and toss with lime juice in bowl. Add red pepper, green onion, coriander and Jalapeno. Stir sugar, vinegar, salt and pepper together until sugar is dissolved. Pour over peach mixture and toss. Serve with nachos.
