Patty Melts With Onion Rings
Ingredients
- 1 lb ground beef, formed into 4 patties (4 oz each, ½ inch thick)
- 0.5 tsp salt, to taste
- 0.3 tsp freshly ground black pepper
- 1 small onion, julienned
- 4 slice Cheddar cheese, 1 oz each
- 1 tbsp vegetable oil
- 8 slice rye bread
- 1 0.5 cup all-purpose flour, for batter
- 2 egg yolks
- 0.8 cup flat beer
- 2 large onions, cut into 1-inch rings
- 2 cup oil, for deep-frying

Preheat a griddle to medium-high and a deep fryer to 350°F (175°C).

Season the patties with salt and pepper. Cook on the hot griddle for 3 to 4 minutes per side. Add the julienned onion to the griddle and sauté 4 to 5 minutes until wilted; season.

Make the batter: whisk flour, egg yolks, and beer together; season with salt and pepper. Dip each onion ring in the batter, letting the excess drip off, and fry in the hot oil for 3 to 4 minutes until golden-brown. Drain on paper towels and season with salt.

During the last 2 minutes of cooking, place a slice of Cheddar on each patty. Once the cheese melts, remove the patties and top each with the sautéed julienned onions.

Brush both sides of the rye bread with oil and toast on the griddle for 1 to 2 minutes per side until golden. Build each sandwich with a patty between two slices of bread. Serve with the crispy onion rings alongside.
