Pasta Florentine Salad

  • 1 lb pasta (penne, bow ties, or sea shells), cooked and cooled
  • 8 oz cooked chicken, shredded or chunked (grilled is best)
  • 2 handful fresh baby spinach
  • 1 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1 bunch green onions, diced
  • 1 bunch fresh basil, chopped
  • 1 tsp salt and pepper to taste
  • 0.3 cup grated Parmesan cheese

Instructions

    Combine dressing ingredients (olive oil, lemon juice, green onions, basil, salt, pepper) in a small bowl and stir to mix.

    Toss together with cooked pasta, chicken, and spinach in a large bowl.

    Sprinkle with Parmesan cheese.

    Allow to rest for at least two hours before serving for best flavor.
