  • 1 can whole tomatoes (32 oz), pureed
  • 0.3 cup olive oil
  • 2 clove garlic, chopped
  • 3 tbsp dried oregano
  • 3 tbsp dried parsley
  • 1 pinch salt to taste
  • 2 cup elbow pasta, cooked
  • 0.5 can white kidney beans (cannellini)

Instructions

    Puree the canned tomatoes and place in a saucepan.

    Add olive oil, garlic, oregano, and parsley. Bring to a boil.

    Cover and simmer for 10 minutes. Uncover and simmer for another 10 minutes, stirring occasionally.

    Cook the elbow pasta according to package directions and drain.

    Pour the tomato sauce over the cooked pasta and add the white kidney beans. Mix well, warm through, and serve.
