Pasta Carbonara

- 4 tbsp butter
- 8 slice bacon, cut in 1/4-inch strips
- 2 large eggs
- 2 large egg yolks
- 1 tsp red pepper flakes
- 1 cup Parmesan cheese, grated
- 0.5 cup heavy cream
- 1 tsp salt
- 1 tsp black pepper
- 1 lb spaghetti

Cream soft butter in a small bowl and set aside.

In another bowl, beat eggs and yolks until blended. Add 1/2 cup Parmesan cheese.

Heat a large casserole dish in a 200°F oven.

Bring a large pot of salted water to boil. Cook spaghetti according to package directions.

Meanwhile, fry bacon in a skillet over medium heat until crisp. Pour off half of the fat.

Stir red pepper flakes and heavy cream into the bacon. Bring to a simmer and keep warm.

Transfer cooked spaghetti to the heated serving bowl and stir in creamed butter. Coat well.

Stir in the hot bacon and cream mixture, then finally the beaten eggs and cheese.

The heat of the pasta will cook the raw eggs. Season with salt and pepper.

Serve with remaining grated Parmesan cheese.
