- 1 lb fettuccine, tagliatelle, or trenette
- 0.8 cup virgin olive oil
- 12 clove fresh garlic, halved
- 1 medium white onion, finely chopped
- 6 medium Idaho potatoes, peeled and cubed
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 4 tbsp butter
- 1 lb fresh string beans, steamed until tender
- 1 0.5 cup freshly grated Parmesan cheese

Peel and cube potatoes. Boil in salted water until tender; do not overcook. Drain and set aside. Steam string beans until tender but still crisp; set aside.

In a heavy skillet, heat olive oil. Add halved garlic cloves and chopped onion; sauté until golden and crisp.

Cook pasta in salted boiling water with 1 tablespoon olive oil until al dente. Drain.

Add drained pasta to a large bowl with potatoes and string beans. Toss gently.

Add butter to the hot garlic-onion sauce and stir to melt. Pour sauce over pasta mixture, add pepper and Parmesan, and work through gently.

Serve with extra Parmesan and French bread. Optionally, sprinkle with 1/4 cup chopped fresh basil for a pesto flavor.
