- 3 lb pig's feet, cut into 2 pieces each
- 8 cup chicken stock
- 2 onions quartered
- 2 stalks celery, cut into long pieces
- 1 tbsp chopped garlic
- 8 whole star anise
- 0.8 cup raw peanuts
- 1 cup sliced shiitake mushrooms
- 1 cup chopped mustard cabbage
- 1 0.5 tsp peeled and minced fresh ginger

In a large saucepan, combine pig's feet, chicken stock, onions, celery, garlic, and star anise. Season with salt and pepper.

Bring to a boil, then reduce to a simmer. Cover and cook for 1½ hours, skimming the surface occasionally.

Add peanuts, cover, and simmer for 30 more minutes.
