  • 3 lb pig's feet, cut into 2 pieces each
  • 8 cup chicken stock
  • 2 onions quartered
  • 2 stalks celery, cut into long pieces
  • 1 tbsp chopped garlic
  • 8 whole star anise
  • 0.8 cup raw peanuts
  • 1 cup sliced shiitake mushrooms
  • 1 cup chopped mustard cabbage
  • 1 0.5 tsp peeled and minced fresh ginger

Instructions

    In a large saucepan, combine pig's feet, chicken stock, onions, celery, garlic, and star anise. Season with salt and pepper.

    Bring to a boil, then reduce to a simmer. Cover and cook for 1½ hours, skimming the surface occasionally.
