Pan Fried Lake Fish

- 4 fish pan-dressed trout, lake perch, or white fish (8–10 oz each)
- 0.8 cup saltine crackers, finely crushed (about 21 crackers)
- 0.3 cup grated Parmesan cheese
- 1 tbsp fresh parsley, snipped
- 0.3 cup all-purpose flour
- 1/8 tsp black pepper
- 3 tbsp fresh lemon juice
- 1 large egg, beaten
- 4 tbsp cooking oil or shortening
- 1 lemon sliced, for serving

Thaw fish if frozen. In a shallow bowl, combine crushed crackers, Parmesan cheese, and parsley. In another shallow bowl, combine flour and pepper. Place lemon juice and beaten egg in separate bowls.

Dip fish in lemon juice, then in flour mixture, then in beaten egg, and finally coat with the cracker mixture.

In a 12-inch skillet, heat oil over medium heat. Add fish in a single layer. Fry for 5 to 7 minutes until brown. Turn fish and fry for 5 to 7 minutes more until fish flakes easily with a fork.

Drain on paper towels. Serve with lemon slices.
