Outback Steakhouse Walkabout Soup
Copycat Outback Steakhouse creamy onion soup with caramelized sweet onions, Velveeta, and a rich white sauce, topped with shredded cheddar.

- 2 cup yellow sweet onions, thinly sliced
- 2 tbsp butter
- 14 oz chicken broth (1 can)
- 0.3 tsp salt
- 0.3 tsp fresh ground pepper
- 2 cubes chicken bouillon
- 0.3 cup Velveeta cubes
- 1 0.8 cup white sauce (béchamel)
- 0.5 cup shredded cheddar cheese, for garnish

In a 2-quart saucepan, melt butter and add onions. Cook over low-medium heat, stirring frequently, until soft and translucent but not brown.

Add chicken broth, bouillon cubes, salt, and pepper. Stir until completely heated through.

Add white sauce (béchamel) and Velveeta cubes. Stir over low heat until cheese is melted and soup is smooth.
