Osso Buco (Crockpot)
Slow-braised veal or lamb shanks with white wine, tomato paste, carrots, lemon rind, and aromatic herbs — serve over pasta.

- 4 piece veal or lamb shanks
- 1 clove garlic, minced
- 3 tbsp olive oil
- 1 cup beef broth
- 0.3 cup dry white wine
- 2 tbsp tomato paste
- 1 whole lemon rind, cut in strips
- 3 small carrots, finely diced
- 1 tbsp parsley, chopped
- 0.3 tsp each dried marjoram, oregano, and sage

Roll shanks in seasoned flour; brown with garlic in hot oil in a skillet.

Add remaining ingredients (except shanks) to crockpot and stir to mix.

Add browned shanks to crockpot.

Cover and cook on LOW for 10–12 hours until shanks are very tender.

Garnish with parsley and serve over pasta.
