Orange Bourbon Chicken
Ingredients
- 4 whole boneless, skinless chicken breasts
- 6 tbsp unsalted butter
- 0.5 tsp salt
- 0.5 tsp black pepper
- 12 oz frozen orange juice concentrate, thawed
- 6 tbsp bourbon whiskey
- 0.5 cup slivered almonds
- 2 tsp unsalted butter (for almonds)

Preheat the oven to 425°F.

In a large, heavy, oven-proof skillet, melt the butter. Let cool briefly but do not solidify. Turn the chicken in the butter to coat, then season with salt and pepper. Tuck the edges under to form compact shapes about 1½ inches thick.

Place chicken skin-side up in the skillet. Bake at 425°F, basting occasionally, for about 15 minutes until cooked through (190°F internal).

Remove chicken to warm plates and keep warm.

In a small pan, sauté the slivered almonds in 2 teaspoons butter until lightly toasted. Season with salt. Set aside to cool and crisp.

Add the orange juice concentrate to the drippings in the skillet over high heat. Stir until reduced by one-third. Stir in the bourbon and heat through. Season with salt and pepper.

Pour the orange-bourbon sauce over the chicken and top with the buttered almonds.
