Old Fashioned Chocolate Pudding
Ingredients
- 2 cup whole milk, plus 2 tbsp
- 0.8 cup sugar
- 4 oz milk chocolate, chopped
- 4 egg yolks
- 2 tbsp cornstarch
- 0.5 tsp vanilla extract
- 1 tbsp unsalted butter
- 1 cup sweetened whipped cream, for serving
- 0.5 oz chocolate curls, for garnish
Instructions
- 1
In a heavy saucepan, combine 2 cups milk and sugar. Bring to a boil to dissolve the sugar, then reduce to a simmer. Whisk in the chocolate until fully melted.
- 2
In a small bowl, whisk the egg yolks together. Temper by spooning a little of the hot chocolate mixture into the yolks while whisking constantly, then whisk the yolk mixture back into the saucepan.
- 3
In another small bowl, whisk the remaining 2 tbsp milk with the cornstarch to form a slurry. Slowly stir the slurry into the hot chocolate mixture.
- 4
Return to a boil and cook, stirring constantly, until thick. Remove from heat and stir in the vanilla and butter.
- 5
Pour into a glass bowl and press plastic wrap directly on the surface to prevent a skin from forming. Refrigerate until completely cold. Whisk until fluffy, then divide into 4 wine glasses. Top with whipped cream and chocolate curls.
