Old Fashioned Beef Stew
Ingredients
- 4 tbsp vegetable oil
- 0.5 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 2 lb beef chuck, cut into 1-inch cubes
- 12 whole small boiling onions
- 6 large potatoes, peeled and diced
- 6 whole carrots, sliced
- 3 stalks celery, sliced
- 31 0.5 oz beef broth (three 10.5-oz cans)
- 3 tbsp all-purpose flour (for thickening)
- 1 tbsp cold water

In a large pot, heat the oil over medium-high heat. In a resealable plastic bag, mix the flour, garlic powder, salt, and pepper. Add beef in handfuls and shake to coat. Brown the coated beef in the hot oil, about 1 minute per side. Remove and set aside.

Lower heat to medium, add the boiling onions, and brown on both sides, about 3 minutes per side. Remove and set aside.

Drain any excess fat from the pot. Add the potatoes, carrots, celery, browned onions, beef, and beef broth. Stir to combine and bring to a boil.

Reduce heat to low, cover, and simmer for 2 hours, stirring occasionally.

About 30 minutes before the stew is done, whisk together 3 tablespoons flour and 1 tablespoon cold water. Slowly stir the mixture into the stew for a thicker broth. Continue simmering uncovered for the final 30 minutes.
