OATMEAL CHOCOLATE CHIP COOKIES

- 1/3 each C. margarine, softened
- 0.5 each C. firmly packed brown sugar
- 1 each egg
- 3 each tsp. vanilla extract
- 0.8 each C. all-purpose flour
- 0.5 each tsp. baking soda
- 0.3 each tsp. salt
- 0.8 each C. quick cooking rolled oats
- 1/3 each C. semisweet chocolate chips

Preheat oven to 375ºF.

Beat margarine at medium speed with an electric mixer until light and fluffy; gradually add brown sugar and beat well.

Add egg and vanilla, beating well.

Combine flour, baking soda and salt.

Gradually add flour mixture to margarine mixture, mixing well.

Stir in oats and chocolate chips.

Coat cookie sheets with cooking spray.

Using 2 teaspoons, drop dough onto cookie sheets, leaving about 2 inches between each cookie.

Portion the dough so that you make about 3 dozen cookies.

Bake 10 minutes or until light brown.
