Nuoc Cham
Emeril's Vietnamese nuoc cham — a fresh, bright dipping sauce of chile, garlic, lime, fish sauce, and water; use as a condiment instead of salt and pepper.

- 1 whole fresh chile pepper, seeded and finely chopped
- 1 tsp garlic, chopped
- 3 tsp sugar
- 1 whole fresh lime, zest and pith removed
- 2 tbsp fish sauce (nuoc mam)
- 3 tbsp water

Stem the chile, split in half, and remove seeds and membrane. Finely chop the chile.

Combine chopped chile, garlic, and sugar in a mortar. Pound into a paste.

Add the lime (with zest and pith removed) to the chile mixture and mash well.

Add fish sauce and water. Mix well.

Serve as a seasoning agent in place of salt and pepper.
