North Carolina Date Cake

A Carolina mountain recipe for North Carolina Date Cake.

  • 1 1/3 cups of flour
  • 1 cup of light brown sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 tablespoon of butter
  • 3/4 cup of chopped pecans
  • 1 cup of chopped dates to which 1 cup of boiling water has been poured over.
  • 1 beaten egg

Instructions

    Cream butter and add the dry ingredients.

    Add nuts, dates and water. Mix well.

  3. 3

    Stir in the beaten egg.

  4. 4

    Pour into a greased 8” X 8” pan

  5. 5

    Bake at 350 degrees for 45 minutes.
