Nacho Casserole

  • 1 lb ground beef
  • 1 cup corn kernels, frozen, fresh, or canned
  • 2 cup crushed tortilla chips, divided
  • 2 cup shredded Monterey Jack cheese, divided
  • 12 oz jar chunky salsa
  • 0.8 cup Miracle Whip salad dressing
  • 1 tbsp chili powder

Instructions

    Preheat oven to 350°F.

    Brown ground beef in a skillet over medium heat. Drain excess fat.

    Stir in salsa, corn, Miracle Whip, and chili powder. Mix well.

    In a 2-quart casserole dish, layer half the meat mixture, half the crushed tortilla chips, and half the shredded cheese. Repeat layers.

    Bake for 20 minutes, or until thoroughly heated and cheese is melted and bubbly.

    To serve, top with shredded lettuce and chopped tomatoes if desired.
