- 2 cup flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 0.3 tsp each cloves, ginger, nutmeg, mace, and salt
- 1 cup dark brown sugar
- 0.8 cup white sugar
- 1 cup coconut
- 2 cup shredded carrots
- 0.5 cup raisins
- 1 whole apple, chopped
- 0.5 cup chopped pecans
- 3 whole eggs
- 1 cup oil
- 1 tbsp vanilla

Preheat oven to 375°F. Combine flour, baking powder, cinnamon, cloves, ginger, nutmeg, mace, salt, dark brown sugar, and white sugar.

Mix in coconut, shredded carrots, raisins, apple, and pecans.

Beat 3 eggs with 1 cup oil and 1 tablespoon vanilla. Add to dry ingredients.

Spoon into oversized muffin tins (makes 12) or smaller tins (makes 24).

Bake 30-45 minutes until a toothpick comes out clean.
