Monterey Spaghetti Casserole

  • 4 oz spaghetti, broken into 2-inch pieces
  • 1 egg
  • 1 cup sour cream
  • 0.3 cup grated Parmesan cheese
  • 0.3 tsp garlic powder
  • 2 cup shredded Monterey Jack cheese
  • 10 oz frozen chopped spinach, thawed and well drained
  • 2 0.8 oz French-fried onions, divided

Instructions

    Preheat oven to 350°F (175°C). Grease a 2-quart baking dish.

    Cook spaghetti according to package directions; drain.

    Beat egg in a medium bowl. Stir in sour cream, Parmesan, and garlic powder.

    Add drained spaghetti, Monterey Jack, spinach, and half the French-fried onions. Mix well.

    Pour into prepared baking dish. Cover with foil.

    Bake 30 minutes until heated through. Remove foil, top with remaining French-fried onions, and bake uncovered 5 minutes more until onions are golden.
