Mexican Tortilla Bake

Ground chicken with salsa, cheese, raisins and green olives rolled into flour tortillas and baked until golden. An unexpected sweet-savory combination.

  • 1 lb fresh ground chicken
  • 16 oz chunky medium salsa
  • 8 oz mild cheddar cheese, shredded and divided
  • 2 box raisins (1.5-oz boxes)
  • 0.5 cup whole green olives, sliced
  • 0 package of flour tortillas
  • 16 oz sour cream for serving

Instructions

    Preheat oven to 375°F.

    Brown chicken in large skillet until thoroughly cooked; drain.

    Stir in salsa, half the cheese, raisins and green olives. Cook 1 minute to blend flavors.

    Spoon about 2 tablespoons meat mixture in the middle of each tortilla. Fold and pierce the edges with a wooden pick.

    Bake at 375°F for 10-15 minutes or until edges of tortilla are golden brown.

    Cool 1 minute. Sprinkle each with remaining cheese. Add dollop of sour cream and serve.
