Mexican Pizza

Copycat Taco Bell-style Mexican pizza: seasoned ground beef and refried beans between two crispy flour tortillas, topped with salsa, cheese, tomatoes, onions, and olives.

  • 0.5 lb ground beef
  • 0.5 tsp salt
  • 0.3 tsp dried minced onion
  • 0.3 tsp paprika
  • 1 0.5 tsp chili powder
  • 2 tbsp water
  • 8 whole small 6-inch flour tortillas
  • 1 cup Crisco shortening or cooking oil
  • 16 oz can refried beans
  • 0.3 cup diced tomato
  • 0.7 cup mild picante salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.3 cup chopped green onions
  • 0.3 cup sliced black olives

Instructions

    Cook the ground beef over medium heat until brown; drain fat. Add salt, onion, paprika, chili powder, and water. Simmer over medium heat for about 10 minutes, stirring often.

    Heat oil in a frying pan over medium-high heat. Fry each tortilla 30-45 seconds per side until golden brown. Set aside on paper towels.

    Heat refried beans in a small pan. Preheat oven to 400°F.

    Stack each pizza: spread 1/3 cup refried beans on one tortilla, add 1/4 to 1/3 cup meat, then another tortilla. Top with 2 tablespoons salsa, tomatoes, cheese, onions, and olives.

    Bake 8-12 minutes or until cheese is melted. Makes 4 pizzas.
