Mexican Manicotti

  • 1 lb lean ground beef, uncooked
  • 16 oz can refried beans
  • 3 tsp chili powder
  • 3 tsp dried oregano
  • 8 oz package manicotti shells, uncooked
  • 2 0.5 cup water
  • 16 oz picante sauce
  • 16 oz sour cream
  • 1 cup shredded Monterey Jack cheese
  • 0.3 cup sliced green onions
  • 0.3 cup sliced ripe olives

Instructions

    Mix uncooked ground beef, refried beans, chili powder, and oregano in a bowl.

    Spoon mixture into uncooked manicotti shells. Place in a greased 13×9-inch baking pan.

    Mix water and picante sauce; pour over manicotti. Cover and refrigerate 8 hours.

    Remove from refrigerator 30 minutes before baking. Cover with foil and bake at 350°F for 1 hour.

    Uncover; spoon sour cream over top and sprinkle with cheese, green onions, and olives.

    Bake uncovered for 8 more minutes until cheese is melted.
