Mexican Casserole Ole

  • 1 lb ground beef
  • 1 0.3 oz taco seasoning packet
  • 15 oz ranch-style beans (or pinto beans)
  • 2 cup shredded Mexican blend cheese, divided
  • 10 0.8 oz cream of mushroom soup
  • 10 oz Ro-Tel diced tomatoes with green chiles
  • 4 oz tortilla chips

Instructions

    Preheat oven to 350°F (175°C).

    Cook ground beef in a skillet until browned; drain well. Add taco seasoning according to package directions.

    In a bowl, combine cream of mushroom soup, Ro-Tel tomatoes, ranch-style beans, and 1 cup cheese.

    Layer chips over the bottom of a 9-inch square casserole dish. Add seasoned beef.

    Add another layer of chips over the meat. Spoon the soup mixture over the chips.

    Top with remaining chips and remaining 1 cup cheese.

    Bake until cheese is fully melted and casserole is bubbly, about 20–25 minutes.
