  • 0.5 cup olive oil
  • 2 large onions, chopped
  • olive oil 8 garlic cloves, minced
  • 3 medium onions, chopped 8 jalapeno peppers, minced
  • 2 green peppers, chopped 3 carrots, peeled and cut crosswise into 1/2in pieces
  • 3 stalks celery, chopped 1 1/2 tbs oregano
  • 8 lbs ground beef 3 lb boneless pork shoulder, cut into 1/2in cubes
  • 1 can tomato paste 2 cans chicken broth
  • 2 can stewed tomatoes 1 large can Italian plum tomatoes drained
  • 2 can tomato sauce 1 potato, peeled and grated
  • 1 can mild salsa 4 cans mild green chilies, chopped
  • 3 cloves garlic, minced 1 large can hot chili beans with gravy
  • 2 3oz jars chili powder
  • 1 jalapeno chili, chopped In a Dutch oven, heat olive oil and add onions,
  • 2 tsp salt garlic, jalapenos, and carrots. Sauté for 10 minutes.
  • 1 tsp oregano Stir in oregano and pork cubes. Cook or 20minutes,
  • 1 tsp black pepper stirring occasionally. Stir in chicken stock, 1 tsp salt,
  • 2 large cans chili beans in gravy tomatoes, and potatoes. Bring to boil, then lower
