Mellow Chili

- 0.5 cup olive oil
- 2 large onions, chopped
- olive oil 8 garlic cloves, minced
- 3 medium onions, chopped 8 jalapeno peppers, minced
- 2 green peppers, chopped 3 carrots, peeled and cut crosswise into 1/2in pieces
- 3 stalks celery, chopped 1 1/2 tbs oregano
- 8 lbs ground beef 3 lb boneless pork shoulder, cut into 1/2in cubes
- 1 can tomato paste 2 cans chicken broth
- 2 can stewed tomatoes 1 large can Italian plum tomatoes drained
- 2 can tomato sauce 1 potato, peeled and grated
- 1 can mild salsa 4 cans mild green chilies, chopped
- 3 cloves garlic, minced 1 large can hot chili beans with gravy
- 2 3oz jars chili powder
- 1 jalapeno chili, chopped In a Dutch oven, heat olive oil and add onions,
- 2 tsp salt garlic, jalapenos, and carrots. Sauté for 10 minutes.
- 1 tsp oregano Stir in oregano and pork cubes. Cook or 20minutes,
- 1 tsp black pepper stirring occasionally. Stir in chicken stock, 1 tsp salt,
- 2 large cans chili beans in gravy tomatoes, and potatoes. Bring to boil, then lower

Thinly cover a #14 Dutch oven with olive oil. Sauté another 30-45 minutes. Serve.
