Meatballs and Gravy

- 1 0.5 lb lean ground beef
- 0.5 lb ground pork
- 2 slice white bread, soaked in water and squeezed dry
- 0.5 cup minced onions
- 3 tbsp chopped fresh parsley
- 1 whole large egg, beaten
- 0.8 tsp salt
- 0.3 tsp fresh ground pepper
- 14 0.5 oz beef broth
- 14 0.5 oz chicken broth
- 2 tbsp cornstarch
- 0.3 tsp dried thyme

Combine ground beef, pork, bread, onion, parsley, egg, salt, pepper, and a pinch of nutmeg in a medium bowl.

Shape mixture into 1-inch balls.

Heat oil in large skillet over medium heat. Add meatballs in batches and cook until browned, about 6 to 8 minutes; drain fat.

Remove meatballs and set aside.

Add beef broth and chicken broth to skillet. Bring to a boil, scraping up any browned bits.

Whisk cornstarch with a little cold water, then stir into broth. Add thyme and simmer until thickened.

Return meatballs to skillet and heat through. Serve over mashed potatoes or egg noodles.
