Meatball Layered Dinner

  • 0.8 lb potatoes, peeled and thinly sliced (raw)
  • 2 medium onions, sliced
  • 4 strips bacon, cut into 1-inch pieces (uncooked)
  • 2 ribs celery, sliced
  • 2 medium carrots, sliced
  • 1 lb ground beef, shaped into small meatballs (uncooked)
  • 4 slice American or Cheddar cheese
  • 3 tbsp uncooked long-grain rice
  • 1 tsp salt
  • 0.3 tsp black pepper
  • 10 0.8 oz can cream of chicken soup
  • 1 cup milk

Instructions

    Preheat oven to 350°F. Butter the sides of a large baking dish.

    Arrange ingredients in layers in this order: sliced potatoes, sliced onions, bacon strips, celery, carrots, small uncooked meatballs, and cheese slices.

    Scatter the uncooked rice evenly over the layers. Season with salt and pepper.

    In a bowl, mix the cream of chicken soup with the milk until smooth. Pour evenly over all the layers.

    Cover tightly with foil or a lid and bake at 350°F for 1½ hours, or until potatoes and carrots are tender and meat is cooked through.

    Remove cover and let rest 5 minutes before serving.
