Meal-in-a-Pie Casserole

Ground beef and mixed vegetable filling in a savory brown sauce poured into a deep-dish pie crust, topped with a cheese and egg custard. A complete dinner in a slice.

  • 16 oz canned Veg-All mixed vegetables, drained
  • 1 each deep-dish pie crust
  • 1 lb ground beef, browned and drained
  • 1 cup grated cheddar cheese
  • 1 large egg
  • 2 tbsp milk
  • 0.5 tsp salt
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup beef broth
  • 0.3 tsp Tabasco pepper sauce

Instructions

    Prepare brown sauce: brown flour in melted butter, stirring constantly. Stir in broth and Tabasco; simmer until thickened.

    Add drained vegetables, browned ground beef and salt to sauce; mix well.

    Pierce deep-dish pie crust with fork and bake at 400°F for 5 minutes.

    Pour meat mixture into pie crust. Mix together grated cheese, egg and milk; pour over meat mixture.

    Bake 15 minutes at 400°F until cheese topping is lightly browned.
