- 2 tbsp unsalted butter, plus extra for pan
- 2 tbsp all-purpose flour
- 2 cup whole milk
- 0.3 tsp freshly ground white pepper
- 6 oz Maytag blue cheese, crumbled
- 2 egg yolks, beaten
- 1 dash Crystal hot sauce
- 0.5 tsp salt, to taste
- 0.8 lb small shell pasta, cooked until tender
- 0.8 cup fine dried bread crumbs
- 0.8 tbsp olive oil

Preheat the oven to 400°F (200°C). Grease a large shallow baking pan with butter.

In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 2 minutes. Whisk in the milk, ½ cup at a time. Season with white pepper. Cook, stirring constantly, for 4 to 6 minutes until thickened.

Remove from the heat and whisk in the blue cheese and beaten egg yolks. Season with hot sauce and salt.

Toss the cooked pasta with the cheese sauce in a large bowl. Pour into the prepared baking pan.

Combine the bread crumbs and olive oil; season with salt and pepper. Sprinkle over the pasta. Bake until the top is golden and bubbly, about 8 to 10 minutes.
