Mashed Potato Soup

An incredibly quick and creamy soup using mashed potatoes as the base, with sautéed vegetables and cream, garnished with parsley.

  • 2 tbsp butter
  • 2 cup cream
  • 2 carrots, peeled and chopped
  • 1 cup mashed potatoes
  • 1 stalk celery, chopped
  • 1 onion, peeled and chopped
  • 1 tsp salt and pepper to taste
  • 1 tbsp chopped parsley, for garnish

Instructions

    Melt butter in a saucepan and sauté carrots, celery, and onion until tender.

    Add cream and heat almost to a boil — do not boil.

    Add mashed potatoes and stir until blended.

    Season with salt and pepper. Garnish with chopped parsley and serve.
