- 1/2 cup cooked potatoes, mashed
- 2 tablespoons butter or margarine, softened
- 1 pound of confectioners' sugar
- 3 squares baking chocolate, melted
- 1 teaspoon of vanilla extract
- A dash of salt
Instructions

Put the mashed potatoes into a mixing bowl and add the butter or margarine, mix well.

Add the confectioners' sugar, and mix well.

Add the vanilla extract to the melted chocolate then add chocolate with salt to the mashed potato mixture.

Press into a lightly greased platter or dish and chill.

Coconut may also be added.

When cool, cut into bars or squares.
