Mascerated Strawberries Over Chocolate Shortcakes
Fresh strawberries macerated in sugar, served over homemade chocolate milk shortcakes with vanilla ice cream.
Ingredients
- 2 pint fresh strawberries, washed and sliced
- 0.8 cup plus 2 tbsp sugar
- 0.5 cup plus 1 tsp butter
- 1 0.8 cup plus 2 tbsp flour
- 0.3 cup cocoa powder
- 2 tsp baking powder
- 1 pinch salt
- 0.8 cup whole chocolate milk
- 8 scoops vanilla bean ice cream
- 0 to taste powdered sugar for dusting

In a mixing bowl, combine strawberries and 1/2 cup sugar. Lightly mash with a fork. Cover and refrigerate for 1 hour.

Preheat oven to 375 degrees. Grease a baking sheet with 1 tsp butter.

In a bowl, sift flour, cocoa, baking powder and salt. Add remaining sugar and mix. Work in remaining butter with hands until the mixture resembles coarse crumbs. Fold in chocolate milk.

On a floured surface, gently pat dough to 1-inch thickness. Cut with a 2.5-inch round cutter. Place on the baking sheet. Bake for 15-18 minutes until just set.

To serve: Split the warm shortcakes and top each with a scoop of ice cream and the macerated strawberries. Dust with powdered sugar.
