Mascarpone Cheese Polenta

  • 2 cup water
  • 2 cup whole milk
  • 1 cup yellow cornmeal (polenta)
  • 2 oz mascarpone cheese
  • 0.3 cup heavy cream, or more as needed
  • 0.5 tsp salt, to taste
  • 0.3 tsp freshly ground white pepper

Instructions

    In a saucepan over medium heat, bring the water and milk to a boil.

    Slowly whisk in the yellow cornmeal, stirring constantly to avoid lumps.

    Cook, stirring constantly, for about 15 minutes until the polenta is thick and pulls away from the sides of the pan.

    Stir in the mascarpone cheese until fully melted and incorporated.

    Add enough heavy cream to achieve a smooth, creamy consistency. Season with salt and white pepper. Serve immediately.
