Maryland Crab Cakes

- 6 slice white bread, crusts trimmed
- 0.8 cup olive oil
- 3 whole eggs, separated
- 0.3 tsp dry mustard
- 0.5 tsp salt
- 2 tsp Worcestershire sauce
- 1 0.5 lb fresh crabmeat, picked clean
- 0.5 tsp paprika
- 3 tbsp unsalted butter

Lay the bread slices on a shallow platter. Pour the olive oil over them and let stand until the bread is thoroughly saturated. Use forks to break into small pieces.

In a large bowl, combine the egg yolks with the dry mustard, salt, and Worcestershire sauce. Beat lightly.

Stir in the oil-soaked bread pieces and the crabmeat. Gently fold in the stiffly beaten egg whites.

Shape the mixture into patties and sprinkle with paprika.

In a skillet over medium heat, melt the butter. Sauté the crab cakes until golden on both sides, about 4 minutes per side.
