- 4 large ripe plum tomatoes
- 3 tbsp unsalted butter
- 2 clove garlic, minced
- 1/3 cup chicken stock
- 0.3 cup dry white wine
- 4 tsp fresh basil, chopped fine
- 0.5 tsp salt
- 0.3 tsp fresh ground pepper

Peel, seed and chop tomatoes. Melt 1 tablespoon butter over medium heat, cook garlic until soft. Pour in stock and wine, simmer uncovered 3 to 5 minutes or until reduced by half. minutes, stirring constantly, until flavors are blended. Add salt and pepper. Serve tossed over angel’s hair pasta, garnish with Parmesan cheese. Serve with red Merlot wine.
