  • 4 large ripe plum tomatoes
  • 3 tbsp unsalted butter
  • 2 clove garlic, minced
  • 1/3 cup chicken stock
  • 0.3 cup dry white wine
  • 4 tsp fresh basil, chopped fine
  • 0.5 tsp salt
  • 0.3 tsp fresh ground pepper

    Peel, seed and chop tomatoes. Melt 1 tablespoon butter over medium heat, cook garlic until soft. Pour in stock and wine, simmer uncovered 3 to 5 minutes or until reduced by half.
