Malasadas Hawaiian Donuts

  • 1 package active dry yeast (1/4 oz)
  • 0.8 cup sugar, plus extra for rolling
  • 0.3 cup warm water (110 degrees F)
  • 6 eggs
  • 6 cup all-purpose flour
  • 0.3 cup melted butter
  • 0.3 tsp salt
  • 1 0.5 cup whole milk
  • 0.5 cup half-and-half
  • 6 cup vegetable oil for frying

Instructions

    In a small bowl, whisk together the yeast, 1 teaspoon sugar, and warm water. Set aside.

    In an electric mixer, whip the eggs until thick and pale yellow. Switch to a dough hook.

    With the machine running slowly, add the yeast mixture, melted butter, milk, and half-and-half. Add the salt.

    Add the flour 1 cup at a time. Mix until the dough forms a soft ball and pulls away from the bowl sides.

    Turn the dough into a lightly oiled bowl. Cover with plastic wrap and set in a warm, draft-free space. Let rise until doubled, about 1-1/2 hours.

    Roll out the dough on a floured surface to about 1/4-inch thick. Cut into roughly 2-inch squares.

    Heat oil to 365 degrees F. Fry the malasadas in batches until golden brown on both sides, about 2 to 3 minutes per side.

    Remove with a slotted spoon and drain on paper towels. While still warm, roll in sugar. Serve immediately.
