Madison Dog

  • 4 all-beef hot dogs
  • 4 oz grated cheddar cheese
  • 12 slice bacon, blanched
  • 4 hot dog buns
  • 4 tbsp yellow mustard
  • 4 tbsp pickle relish

    Preheat a griddle over medium-high heat.

    Make one 1/2-inch slit lengthwise down the side of each hot dog. Fill each slit with 1 ounce of grated cheddar cheese.

    Wrap three slices of blanched bacon tightly around each cheese-stuffed hot dog.

    Place the wrapped hot dogs on the hot griddle. Weigh down each hot dog using a waffle iron or heavy pan.

    Remove the weight every 2 to 3 minutes to turn the hot dog. Continue until all four sides are seared, about 8 to 10 minutes total.

    Spread mustard and relish on each bun. Place the Madison Dog in the bun and serve.
