Macaroni Luncheon Casserole

A classic layered macaroni casserole with crispy bacon, onion, and a tomato-ketchup sauce all smothered in melted Cheddar cheese. Freezes beautifully.

  • 2 cup macaroni
  • 0.5 lb bacon, chopped
  • 1 cup onion, finely chopped
  • 1 can tomato soup
  • 0.5 can milk
  • 0.5 cup tomato ketchup
  • 0.5 lb Cheddar cheese, grated

Instructions

    Preheat oven to 350°F. Boil macaroni for 8 to 10 minutes in salted water. Drain and rinse with cold water.

    Fry bacon until most of the grease is removed, but not crisp. Remove from pan. Fry onion in bacon fat until just transparent.

    Mix tomato soup, milk, and ketchup in a bowl.

    Grease a 2-quart casserole. Layer 1/3 of macaroni, then 1/3 of bacon, cheese, and onion, then 1/3 of tomato mixture. Repeat for two more layers.

    Cover and bake for 1 to 1½ hours.
