Lyonnaise Potatoes

  • 2 lb Yukon Gold potatoes, peeled and thinly sliced
  • 2 tbsp olive oil
  • 4 onions, julienned
  • 2 tbsp chopped garlic
  • 0.5 cup butter (1 stick)
  • 1 tbsp finely chopped parsley

Instructions

    Preheat oven to 400°F. Blanch the sliced potatoes in boiling salted water for 2 minutes. Drain and set aside.

    In a large oven-proof sauté pan, heat olive oil. Add the onions, season with salt and pepper, and sauté until caramelized, about 8 to 10 minutes.

    Turn the heat to high. Add the butter. When it begins to foam, add the garlic and potatoes.

    Season with salt and white pepper. Toss to combine and transfer the pan to the oven.

    Roast for 15 to 20 minutes, tossing occasionally, until the potatoes are golden and tender.

    Garnish with chopped parsley and serve from the pan.
