- 6 all-beef hot dogs
- 3 smoked sausage links
- 3 chorizo sausage links
- 4 tbsp olive oil
- 1 medium onion, julienned
- 1 medium green pepper, julienned
- 2 cup chili
- 0.5 cup grated cheddar cheese
- 0.5 cup minced onions
- 0.3 cup yellow mustard
- 0.3 cup Creole mustard
- 1 cup pickled relish
- 12 hot dog buns

Preheat the grill. Season the hot dogs, smoked sausage, and chorizo with 2 tablespoons olive oil, salt, and pepper.

Grill all the sausages for 2 to 3 minutes per side until charred and heated through.

In a sauté pan, heat remaining olive oil. Sauté the julienned onion and green pepper until softened, about 5 minutes.

Warm the chili in a small saucepan.

Place assorted sausages in hot dog buns. Top with sautéed peppers and onions, chili, cheddar cheese, minced onions, mustards, and relish.
