  • 1 large live lobster (2 to 3 lbs)
  • 4 oz Ritz crackers, crushed
  • 0.3 cup drawn butter
  • 1 tbsp finely chopped parsley
  • 1 lb steak fries
  • 2 cup vegetable oil, for frying
  • 2 fresh lemons, halved
  • 2 tbsp malt vinegar

    Preheat oven to 450°F. Heat vegetable oil to 375°F for frying.

    Split the lobster: holding it belly-up, insert knife at the head and cut through the body. Remove the stomach sac and intestinal vein.

    Mix crushed Ritz crackers with drawn butter and parsley. Season with salt and pepper. Pack cracker mixture onto the exposed lobster meat.

    Place stuffed lobster halves on a baking sheet and roast for 12 to 15 minutes until the topping is golden.

    Meanwhile, fry the steak fries in hot oil until golden and crisp, about 4 to 5 minutes. Drain and season with salt.

    Serve the lobster halves alongside the chips with lemon halves and malt vinegar.
