Loaded Baked Potato Soup

  • 4 large baking potatoes
  • 0.7 cup butter
  • 0.7 cup flour
  • 6 cup milk
  • 4 green onions, sliced
  • 1 cup sour cream
  • 2 cup bacon, crisp-cooked and crumbled
  • 5 oz cheddar cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    Bake potatoes at 350°F until fork-tender. Scoop out potato flesh and set aside.

    Melt butter in a medium saucepan. Whisk in flour until thoroughly blended.

    Gradually add milk, whisking constantly. Add salt and pepper and simmer over low heat.

    When milk mixture is very hot, whisk in potato flesh and green onions.

    Add sour cream and crumbled bacon. Heat thoroughly.

    Add cheese a little at a time until all is melted in. Serve with crusty French bread.
