Loaded Baked Potato Salad

  • 8 potatoes potatoes, cubed (half peeled, half with skin)
  • 6 slice bacon, diced and crisp cooked
  • 2 cup shredded cheddar cheese
  • 1 cup Miracle Whip
  • 16 oz sour cream
  • 6 stalks green onions, sliced
  • 2 tsp salt
  • 0.3 tsp ground black pepper

Instructions

    Cube and boil potatoes with salt until tender. Drain.

    Crumble cooked bacon and slice green onions including tops.

  3. 3

    Combine sour cream, pepper, and Miracle Whip in a large bowl.

    Add potatoes to dressing and mix.

    Fold in bacon, onions, and most of the cheese, reserving some for the top.

    Pour into a baking dish. Top with reserved cheese, onions, and bacon.

    Bake at 350°F for 10 to 15 minutes until cheese melts.
