Liver & Rice Casserole

  • 1/2 cup uncooked rice
  • 2 3/4 cups boiling water, divided
  • 1 onion, chopped
  • 3 tablespoons melted oleo
  • 1 pound calf liver, cubed
  • 2 tablespoons salad oil
  • 1 can stewed tomatoes
  • Salt
  • Pepper

Instructions

    COOK rice in 2 cups water for 5 minutes; drain and rinse with cold water.

    BROWN onion in oleo and put in 2 quart casserole.

  3. 3

    BROWN liver 'til done. REMOVE from pan, keep warm.

    IN pan, cook onion, green pepper, tomatoes 15 minutes.

    COVER with rice, tomatoes, rest of water, salt and pepper.

  6. 6

    COOK for 1 hour at 400°F.
