Lentil Salad

  • 1 cup dried lentils
  • 1 cup diced carrots
  • 1 cup diced red onions
  • 2 clove garlic, minced
  • 1 bay leaf bay leaf
  • 0.5 tsp dried thyme
  • 2 tbsp lemon juice
  • 0.5 cup diced celery
  • 0.3 cup chopped fresh parsley
  • 1 tsp salt
  • 0.3 tsp ground black pepper
  • 0.3 cup olive oil

Instructions

    In a saucepan, combine lentils, carrots, onion, garlic, bay leaf, and thyme.

    Add enough water to cover by 1 inch. Bring to boil, reduce heat, and simmer uncovered for 15 to 20 minutes until lentils are tender but not mushy.

    Drain lentils and vegetables. Remove bay leaf.

    Add olive oil, lemon juice, celery, parsley, salt, and pepper. Toss to mix.

    Serve at room temperature.
