Lemonade Muffins

Bright and tangy muffins made with frozen lemonade concentrate, brushed with more lemonade while hot and sprinkled with sugar.

  • 1 0.5 cup flour
  • 0.3 cup sugar
  • 2 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 whole egg, beaten
  • 6 oz frozen lemonade concentrate, thawed
  • 0.3 cup milk
  • 0.3 cup cooking oil
  • 0.5 cup chopped walnuts

Instructions

    Mix dry ingredients in a bowl. In another bowl, mix 1/2 cup of the lemonade, egg, milk, and oil.

    Add to dry mix, stirring until just moistened. Gently stir in nuts.

    Spoon into prepared muffin pans and bake at 375°F for 15-20 minutes or until a toothpick tests clean.

    While hot, brush tops with remaining lemonade and sprinkle with white sugar.

    Makes 8-9 large muffins.
