Lemon Linguini with Rocket and Parmesan

  • 3 lemons, juiced
  • 6 tbsp olive oil
  • 4 0.4 oz Parmesan, grated
  • 1 0.4 oz fresh basil leaves, finely chopped
  • 1 0.8 oz wild rocket (arugula)
  • 1 tsp salt and pepper to taste

Instructions

    Cook linguine in a large pot of boiling salted water according to package directions. Drain thoroughly and return to the saucepan.

    In a bowl, combine the lemon juice and olive oil, then stir in the grated Parmesan until you get a thick, creamy sauce.

    Pour the sauce over the hot linguine and toss well to coat every strand.
