Lemon Linguini with Rocket and Parmesan

- 3 lemons, juiced
- 6 tbsp olive oil
- 4 0.4 oz Parmesan, grated
- 1 0.4 oz fresh basil leaves, finely chopped
- 1 0.8 oz wild rocket (arugula)
- 1 tsp salt and pepper to taste

Cook linguine in a large pot of boiling salted water according to package directions. Drain thoroughly and return to the saucepan.

In a bowl, combine the lemon juice and olive oil, then stir in the grated Parmesan until you get a thick, creamy sauce.

Pour the sauce over the hot linguine and toss well to coat every strand.

Stir in the fresh basil and rocket. Season with salt and pepper.
