Lemon-Lime Cookies

  • 1 cup sugar
  • 2/3 cup shortening
  • 1 tablespoon grated lemon peel
  • 2 tablespoons lemon juice
  • 2 teaspoons grated lime peel
  • 1 tablespoon lime juice
  • 1 egg
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

    Heat oven to 375º.

    Beat sugar, shortening, lemon peel, lemon juice, lime peel, lime juice and egg in large bowl with electric mixer on medium speed, or mix with spoon.

    Stir in flour, baking powder, baking soda and salt.

    Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.

    Bake 11 to minutes or until edges are golden brown.

    Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

    Cool completely.
